Try this alternative souvlaki and you will be amazed with this alternative combination of artichoke and chicken! It’s really good and healthy!

Serves: 4 Prep. time: 25′ + 30′ waiting Cooks in: 20′ Ready in: 45′

Ingredients
500 g chicken breast, diced (2.5cm)
1 tsp harissa paste
4 tbsp strained yogurt
2 garlic cloves, finely chopped
4 large artichokes, peeled, hearts drizzled with lemon juice, quartered
2 sliced stale bread
2 tbsp fresh coriander
2 tbsp extra-virgin olive oil
toasted pita breads, for serving
wooden skewers soaked in water for 20′

Method
Step 1
In a bowl mix chicken pieces with harissa paste, yogurt and garlic. Marinate for 20-30 minutes.

Step 2
Thread chicken and artichokes pieces into skewers.

Step 3
Whizz bread with coriander and olive oil and brush skewers with the mixture. Grill for 15-20 minutes until nicely colored and cooked through. Serve warm with pita breads…
