This perfect appetizer will surely make your day. Full of protein, it’s healthy, light and full of flavors.

Serves: 4-6 Prep. time: 15′ Cooks in: 25′ Ready in: 40′

Ingredients
4 tbsp extra virgin olive oil
3 spring onions, chopped
2 garlic cloves, mashed
3 sweet potatoes, peeled, diced
400 g pumpkin, peeled, diced
150 g baby spinach leaves, chopped
3 tbsp parsley, finely chopped
6 poached eggs
150 g feta cheese, crumbled
1-2 chilies, finely chopped
salt, black pepper

Method
Step 1
Heat oil in a non-stick frying pan on medium heat and cook onion and garlic for 1′-2′ or until fragrant.

Step 2
Stir in sweet potatoes, pumpkin, salt and pepper and cook until colored. Simmer for 15′ on low heat or until soft. Stir in spinach and cook until wilted, for 3′-4′, until all liquid has evaporated. Remove pan from heat.

Step 3
Divide in dishes and top with cheese, parsley, chilies and one poached egg. Serve with crusty bread.
