A nice homemade compote.

850ml water
28g. Stevia
½ vanilla pod
½ rosemary sprig
10 apricots

Process: Cut the vanilla pod in half, take one half and open it along the side. Scrape away the spores with a sharp knife in a small bowl where you will add the stevia

Preparing the syrup
Step 1
Put the water and the vanilla-stevia mix in a saucepan and leave them to boil. Stir and form a light syrup. Once boiled, remove the saucepan from the fire and let it become lukewarm

Preparing the compote
Step 1
Wash, clear and cut the apricots in half. Remove the seeds

Step 2
Fill a jar with apricots, put the sprig of rosemary inside and pour the warm syrup until the fruit is covered.

Step 3
Close the jar and refrigerate. After 2 weeks, the compote is ready for consumption
