A rustic spicy Greek dish made with thick country sausages and peppers in a rich tomato sauce! Pair it with feta cheese, lots of crusty bread, to dig in all the delicious sauce, and a glass of red wine or tsipouro!
Serves: 4 Prep. time: 15′ Cooks in: 25′ Ready in: 40′
5 thick country sausages with fresh herbs, chopped
1 onion, grated
300 g red peppers, chopped
700 long green peppers
2 eggplants, diced
2 tomatoes, grated
1/2 cup extra-virgin olive oil
Preheat oven at 200οC and brush a baking dish with oil. Transfer eggplants, brush with oil and bake until tender. Then add sausages and bake for another 5 minutes until cooked through.
In a non-stick frying pan, heat oil and cook peppers until nicely colored. 1-2 minutes before removing pan from heat cook onion until translucent. Add eggplants, tomatoes, salt and a little water and boil on medium heat until sauce thickens. Serve with tangy feat cheese and lots of crusty bread.
