These flat croquettes are a traditional recipe of Kythnos island. The cheese and vegetables make a filling, fun treat at your next brunch!

Serves: 4 Preparation time: 20′ Cooks in: 10′ Ready in: 30′

Ingredients
4 eggs, lightly beaten
3 courgettes, grated
1 large onion, finely chopped
250 gr feta cheese, crumbled
1 large potato, grated
3 tbsp spearmint, finely chopped
self-rising flour
oil for frying
salt, freshly ground black pepper

Method
Step 1
Season grated courgettes with salt, squeeze out excess liquid and mix in a bowl with onion, cheese, potato, spearmint and eggs.

Step 2
Season with pepper, add flour a little at a time, until mixture thickens. Let it settle in the fridge for 1 hour.

Step 3
Shape into large flat croquettes and fry in hot oil until nicely browned from both sides. Serve warm.
