There are dishes which, regardless of how traditional we are, we secretly want to try. To us the favorite one for this season is this fresh strawberry sauce pasta. Don’t’ worry, the sauce will be spicy enough to temper the berries’ sweetness. It’s like May in a dish!

Serves: 4 Prep. time: 5′ Cooks in: 25′ Ready in: 30′

Ingredients
500 g spaghetti
500 g strawberries, hulled, halved
40 ml extra-virgin olive oil
1 medium red onion, finely chopped
1 garlic clove, finely chopped
1 tsp tomato paste
1 tbsp brown sugar
2 tbsp balsamic vinegar
8 black pepper berries
6 allspice berries
fresh basil leaves, for serving
salt, pepper

Method
Step 1
Cook spaghetti al dente. Drain, reserving half cup of boiling water. In the meantime, in a large wok heat oil and cook onion for 2 minutes or until translucent. Stir in garlic and cook for less than a minute, until fragrant.

Step 2
Stir in strawberries. Sprinkle with sugar, season with salt and pepper, add pepper and allspice berries and simmer on low heat for 15 minutes or until they start to break down. Drizzle with vinegar and cook for another minute. Add spaghetti in the sauce along with reserved water. Toss gently and divide in plates.

Step 3
Garnish with a few basil leaves and season with a little extra pepper if you wish and serve immediately.
