What a delicious cake! Full of honey, spices, olive oil and fruits…Try it, your kids will love it, so will you!

Serves: 10-12 Prep. time: 20′ Cooks in: 55′ Ready in: 1:15′

4 pears, diced
450 g whole wheat flour
2 tsp cinnamon powder
1/2 tsp ginger powder
1/4 tsp clove powder
1 1/2 tsp baking soda powder
1/2 tsp salt
5 egg yolks
200 ml extra virgin olive oil
450 g honey

Step 1
In your stand mix beat egg whites until fluffy. Add olive oil and honey
and beat until well combined.

Step 2
In the meantime in a bowl mix flour with cinnamon, ginger, clove, soda
and salt. Stir in meringue using a wooden spoon.

Step 3
Brush with oil a bundt cake tin and dust with flour. Bake in a preheated
oven at 160ºC/fan for 50-55 minutes.
