Highly nutritious tahini (a paste made from ground hulled sesame seeds) can be used in many ways to make delicious meals. This is a very simple recipe for palate pleasing tahini patties.

Ingredients
1/2 kg durum wheat flour
200g tahini
1 cup sesame oil
50g sesame seeds
1 tablespoon salt

Method
Step 1
Prepare the dough: Put the flour in a bowl with the salt. Gradually add cold water mixing the ingredients and then knead until you get a dough relatively hard but pliable.

Step 2
In a separate bowl, mix the tahini and the sesame oil.

Step 3
Roll the dough into four thin sheets. Brush each sheet with the tahini-sesame oil mixture, fold it in four and knead again.

Step 4
Finally, roll the dough into a thick sheet, cut into thick strips and then into large squares. Fold in two to make little triangles.

Step 5
Place the patties one next to the other on a greased baking sheet, sprinkle with sesame seeds and bake in moderate oven at 180oC.
