This delicious pie comes from Thessaly, region of northern Greece, the land of the Centaurs. It’s simple, yet tasty, healthy and worth trying!

Ingredients
2 cups crushed wheat (tarhana or trahana)
3 cups lukewarm water
3 tbsp butter
2 cups feta cheese, crumbled
½ cup extra-virgin olive oil
a little salt

Method
Step 1
Soak crushed wheat in the lukewarm water in a bowl overnight. The next day stir in oil and a little salt.

Step 2
Preheat oven at 180οC. Butter a round baking dish and spread the tarhana mixture from the bowl, pressing with your hands to cover the base. Sprinkle with feta cheese, chunks of butter and bake until nicely colored. Eat it warm as it is, or you can drizzle with honey or sprinkle a little sugar over the top.
