This gratin is a versatile side dish. Use good quality zucchini and goat cheese, plus fresh basil for more summer freshness!

Serves: 4 Prep. time: 10′ Cooks in: 40′ Ready in: 50′

Ingredients
6 medium zucchini, sliced
6 slices goat cheese
120 g pecorino cheese, grated
8 medium ripe tomatoes, sliced
5 tbsp extra-virgin olive oil
200 ml double cream
100 g fine breadcrumbs
2 tbsp fresh basil, chopped
pepper

Method
Step 1
Preheat oven at 200oC. Heat oil in a non-stick frying pan and cook zucchini on both sides for 2 minutes until lightly colored. Drain on kitchen paper.

Step 2
In a bowl mix double cream with cheese and basil.

Step 3
Brush an oven-proof baking dish with oil and sprinkle with breadcrumbs. Cover base with one layer of fried zucchini. Cover with tomato slices. Spread half cream-cheese mix and season with a little pepper. Repeat procedure and cover with goat cheese slices on top.

Step 4
Bake for 30-35 minutes, until cheese is nicely colored. Allow 10 minutes to cool a little and serve warm.
