This quick, easy and fragrant recipe for steamed fish with tahini sauce will definitely become a favorite in your family!
800gr sea bass fillets
1 celery stick
1 bay leaf
⅓ cup white wine
2 cups water
salt, freshly ground pepper
For the tahini sauce
1/3 cup sesame tahini
150gr rocket, blanched, strained
1 large avocado, diced
4 tbsp extra-virgin olive oil
1 lemon, juiced
½ tsp ground cumin
2 tbsp fresh coriander leaves, finely chopped
¼ cup hot water
sea salt, freshly ground pepper
For the fish: Season fish fillets with salt and pepper and place them with the rest of the ingredients in a pan basket, and steam for 20-25 minutes, until tender. Place on a serving plate and keep warm. Discard bay leaf.
For the sauce: Whizz all sauce ingredients in a food processor except water. Add water gradually until sauce gets the desired consistency.
Serve fish and veggies warm, drizzled with the tahini sauce.
