Ingredients

1 pork tenderloin, about 600g.
2 tablespoons olive oil
1 tablespoon fresh butter
1 medium onion, grated
1 shot of tsipouro
2 tablespoons mustard
1 tablespoon rosemary leaves
1 tablespoon honey
1 glass of white wine
1 tablespoon fresh thyme
Salt and freshly ground pepper

Method

Step 1

Add plenty of salt and pepper to the tenderloin. In a large skillet, heat the olive oil and the fresh butter. Stir in the grated onion and sauté. Add the whole tenderloin and the rosemary leaves and sauté well until the meat is golden brown on both sides. Add the shot of tsipouro.

Step 2

Mix in a large glass of wine the mustard and the honey and pour the mixture in the pan. Reduce heat, cover the pan and let the meat cook for about 10 minutes, turning it occasionally.

Step 3

Remove the tenderloin and place it on a cutting board. Stir the sauce well and turn off the heat. Cut the tenderloin into slices, sprinkle with a little thyme and serve on a platter. Drizzle with the delicious sauce.

Tip: *The perfect garnish for this dish are a few caramelized onions.
