10 medium shrimps, peeled
1 chicken breast boneless, in strips
1 carrot, finely sliced
5 mushrooms, finely chopped
1 tbsp fresh ginger, finely chopped
2 spring onions
100 g packaged pre-cooked noodles
6 tbsp coconut milk
1 lime, juiced + 4 wedges
In a pan bring 1½ lt of water to a boil. Add shrimps and chicken pieces. Season with salt.
Stir in carrot, mushrooms, ginger and spring onions. Season to taste.
Add noodles and coconut milk and bring to a boil, until noodles soften and separate when stirred. Turn off heat and stir in lime juice. Divide hot soup in bowls and serve immediately with lime wedges.
