If you are after something a bit healthier and lighter, try this simple salmon burgers.

Serves: 4-6 Prep. time: 20′ Cooks in: 20′ Ready in: 40′

Ingredients
800 g salmon fillet, skinless, boneless
2 tbsp sesame oil
2 tbsp fig balsamic vinegar
2 garlic cloves, crushed
1½ tsp fresh ginger, finely grated
3-4 spring onions, finely chopped
3 large eggs
½ cup sesame seeds, toasted
2-3 tbsp coconut flour
vegetable oil for frying

Method
Step 1
Wash salmon and pat dry with kitchen paper. With a sharp knife cut or flake the fillets. Alternatively, pulse in a multi but be careful – it shouldn’t be mashed or creamy, it should be flaky.

Step 2
In a bowl mix salmon, sesame oil, vinegar, garlic, ginger, onion, eggs and sesame. Add coconut flour a little at a time, until all ingredients incorporate.

Step 3
Heat a few tbsps of oil in a large non-stick pan. Oil your hands lightly and shape 2 heaped tbsps salmon mix into a burger. Repeat procedure and cook burgers in batches for 4-6 minutes on each side until nicely colored. Pat dry on kitchen paper. Serve warm with a light mayo sauce and green salad with rocket.
