The perfect lunch, hearty, tender and juicy! Serve with rice or potatoes if you wish.

Serves: 4 Prep. time: 15′ Cooks in: 1:50′ Ready in: 2:5′

50 g butter or extra-virgin olive oil
1 kg beef fillet
250 g mushrooms, finely chopped
2 medium onions, finely chopped
4 slices ham, chopped
1 bunch parsley, finely chopped
4 ripe tomatoes, finely chopped
½ cup white wine
½ lt beef stock
salt, pepper

Step 1
Heat butter in a large frying pan and fry beef turning it to seal and brown it all over. Add onions, mushrooms, ham and parsley and fry on medium heat for 5 mins. Stir in wine and wait for alcohol to evaporate. Add tomatoes, season with salt and pepper and cook on medium heat until tomato liquid is completely absorbed.

Step 2
Preheat oven at 200οC. Remove pan from heat and leave to cool. Transfer all ingredients from the pan in a large piece of double foil and wrap creating a packet.

Step 3
Place packet in a baking pan and pour in stock. Bake for 1 hour and 30 mins adding extra water in the pan if necessary. Serve beef warm with rice or potatoes.
