These beef skewers are marinated in a delicious garlic & spices sauce and grilled to tender and juicy perfection!
Serves: 4-6 Prep. time: 15′ + 8h marinating Cooks in: 20′ Ready in: 35′
1.200 kgr beef fillet, cut in chunks of the same size
wooden skewers, soaked in water for 20΄
For the marinade:
12 garlic cloves, mashed
1 tbsp ground cumin
¼ cup chili sauce (medium hot)
½ cup red wine vinegar
2 tsp freshly ground black pepper
1 tsp salt
Put meat pieces in a bowl. Put mashed garlic with a little water in a small bowl and stir until you get a nice paste.
For the marinade: In a bowl mix well garlic with vinegar, chili paste, cumin, salt and pepper
Toss meat with marinade, cover with wrap or foil and refrigerate for at least 8 hours. Leave at room temperature for 1 hour before grilling.
Preheat your grill to medium-high. Drain beef from marinade and thread the pieces on skewers. Grill for 5-7΄, turning occasionally, until cooked through. At the beginning, brush with marinade once or twice, to help them remain juicy. Do not brush with marinade towards the end. Serve warm with rice or corn.
