Try this salad with highly nutritious beets that contain antioxidant properties! Super easy, super healthy!

Serves: 4-5 Prep. time: 30′ Cooks in: 30′ Ready in: 60′

Ingredients
2 beetroot bulbs, cooked
150 g bulgur,
½ lemon, juiced
1 bunch mixed fresh herbs (basil, parsley, mint), finely chopped
150 g feta cheese, crumbled
2-3 tbsp walnuts, finely chopped
2 dried figs, thinly sliced
salt, pepper

For the dressing
1 orange, juiced
½ lemon, juiced + a little zest
20 ml white wine vinegar
1 tsp runny honey
40 ml extra virgin olive oil

Method
Step 1
In a bowl soak bulgur in 300 ml boiling water, lemon juice and salt for 20′ or follow packet instructions.

Step 2
Dressing: Whizz all ingredients until well combined.

Step 3
In a salad bowl mix bulgur with beetroot, herbs and half dressing and refrigerate for 30′.

Step 4
In a small bowl mix feta cheese with a little pepper, 1 tbsp olive oil and form little cheese balls. Roll cheese bowls in walnut until covered.

Step 4
Garnish salad with figs and cheese balls, drizzle with remaining dressing and serve.
