More like a dip than a salad, “Kaparosalata” is a traditional appetizer that comes from Syros.

1 cup capers
1 medium onion
1 clove of garlic
1 green pepper
2 slices white bread
1 glass olive oil


Step 1

Put the capers in water for about 1 hour to get rid of some of the salt. Rinse and clean your vegetables.

Step 2

Soak and drain the bread. Put in a food processor the capers, the onion, the garlic and the pepper and process until well mixed.

Step 3

Add the bread and then gradually add the oil and the vinegar. Process again until you get a homogeneous mixture.
