A simple, silky smooth and delicious cold soup. It’s refreshing and flavorful, the perfect starter to any meal or a healthy snack.

Ingredients
1 kg ripe tomatoes, peeled, seeded, chopped
200gr bread without crust
100ml extra-virgin olive oil
1 garlic clove, minced
1 tsp salt

For serving:
1 egg hard-boiled, diced
cured ham, in pieces
basil croutons
Method
Step 1
Blend tomatoes with garlic until smooth and well combined.

Step 2
Add bread, oil and salt and blend once more, until soup is silky smooth. Chill for 2-3 hours.

Step 3
Divide soup in bowls, garnishing with egg and ham pieces, basil croutons
and a few drops of olive oil.
