Crepes are really easy to make but this filling is absolutely delicious and hearty. Buy ready-to-use crepes for a faster result.

Serves: 10-12 crepes Prep. time: 20′ Cooks in: 60′ Ready in: 1:20′

Ingredients
1 package crepe mix
1 jar ready-made tomato sauce

For the filling
350 ground beef
1 medium onion, finely chopped
1/4 cup extra-virgin olive oil
1 garlic clove, finely chopped
½ tsp cayenne pepper
200 g spinach, chopped
1 ripe tomato, grated
1 cup fresh coriander or parsley, finely chopped
200 g soft cream cheese
2 cups Kaseri cheese or Parmesan, coarsely grated
salt, pepper

Method
Step 1
Filling: Heat oil in a large frying pan and cook onion and garlic for 1′. Stir in beef and cook until it changes color. Add spinach and cook until wilted. Stir in tomato, salt, cayenne pepper and cook until all liquid has evaporated. When cold, stir in coriander or parsley and cream cheese.

Step 2
In the meantime, prepare crepes following pack instructions. When cool, stuff with the filling and make rolls. Bring the edges inwards to seal the filling. Place in an oven-proof baking dish.

Step 3
Preheat oven at 200οC. Brush 2 tbsp of sauce in the bottom of the baking dish and place crepes seam side down. Pour with remaining tomato sauce, sprinkle with cheese and bake until cheese melts. Serve warm.
