Chewy, sweet, unique – delicious!

1 cup molasses
1½ cup extra-virgin olive oil
1½ cup fresh orange juice
1½ cup water
1 cup sugar
4½ cups all-purpose flour
3 tsps baking powder
1 tsp baking soda
1½ tsp cinnamon
1 tsp clove powder
Preheat the oven to 180C (350F). Pour the olive oil, orange juice, water, molasses and sugar in a stand mixer bowl and beat softly on the mixer’s lowest setting until combined.
On a separate bowl mix the flour, baking powder, baking soda, cinnamon and clove powder to combine. Add slowly into the stand mixer bowl and beat well until you have a rough texture.
Oil a medium rectangle baking dish and dust with some flour. Discard excess flour.
Pour in the rough mixture and spread evenly. Bake on the lowest rack of oven for 50-60 minutes or until a knife inserted in the middle comes out clean.
Leave molasses pie cool to room temperature, spread honey on top and serve.
