If you are an okra fan, this recipe will surely please you! Serve it as an appetizer or next to some beautifully baked meat or fish!

Serves: 6 Preparation time: 30′ + 30′ waiting Cooks in: 1h Ready in: 1:30′

1 kg fresh okra, washed, dry
1½ cup red wine vinegar
1 cup extra-virgin olive oil
3 tomatoes, finely sliced


Step 1
Soak the okra in vinegar for half an hour. Rinse and pat dry before cooking.

Step 2
Season okra with salt, tossing really well.

Step 3
Preheat oven to 180°C/fan. Half-fry okra with the 1 cup olive oil in a pan with heavy bottom.

Step 4
Brush a medium baking dish with oil and lay the bottom with half tomato slices. Add okra and cover with the rest tomatos.

Step 5
Drizzle with the oil from the frying pan, season lightly and bake okra for 40 minutes. Eat warm or at room temperature.
