The ultimate family dinner with sweet peas and carrots! Kids will surely love it. Serve with potatoes, fried, baked or mashed and a nice salad on the side.
Serves: 5-6 Prep. time: 30′ Cooks in: 60′ Ready in: 1:30′
1 kg minced beef
250 g stale bread, soaked (squeeze out excess water)
1/3 cup extra-virgin olive oil
2 tsp dried oregano
1 large onion, grated (keep any juice)
1 tbsp tomato paste
1 cup peas, boiled
3 medium carrots, boiled, sliced
salt, black pepper
Preheat oven at 180οC/fan. In a bowl mix well for 5 minutes minced beef with bread, oil, oregano, onion, tomato paste, eggs and season with salt and pepper. Add peas and carrots and knead softly until incorporated (give the shape of a loaf)
Transfer meat loaf on a non-stick medium baking dish and cover with non-stick baking parchment. Bake for 1 hour, removing paper the last 10 minutes. Serve in slices with oven of fried potatoes.
