Sheftalia is a juicy lamb and pork pattie wrapped in caul fat (a lacy membrane of fat that surrounds the stomach and other digestive organs) and cooked over fire. It is perfectly juicy and so tasty!

1 kg pork minced
½ kg beef minced
250 g onions, finely chopped
1 tsp pepper
1 tsp salt
1 bunch parsley, finely chopped
1 tbsp spearmint, finely chopped
1/4 tsp cinnamon
1 kg caul fat pieces
extra-virgin olive oil
Cook onion in a little oil until translucent and fragrant.
In a bowl mix cooked onion with all ingredients except caul fat. Form patties and wrap in caul fat.
Cook in live fire or oven grill until cooked through. Serve hot with French fries, warm pita bread and a nice green salad.
