Perfect cool melon, salty prosciutto and tasty halloumi cheese marry beautifully! Ideal for a sharing platter starter!

1 small melon, scooped
6 prosciutto slices
100gr halloumi cheese, in small cubes (grilled if you wish)
basil leaves

For the vinaigrette:
60ml extra-virgin olive oil
2 tbsp lemon juice
basil leaves
salt, freshly ground black pepper

Step 1
On a serving plate lay all prosciutto slices. Arrange melon balls on top, scatter halloumi cubes and garnish with basil leaves.

Step 2
Whizz all ingredients for the vinaigrette until well-combined and pour over salad. Serve right away.
