My dinner started with light sea bass fillet “a la Grec” seasoned with orange, lemon and fresh coriander. The seasoning was slightly acidic, the Greek radish was a delicate touch, adding the appropriate slight spicyness. The next course, a squid with basil pesto and sweet potato chips was undeniably one of the most interesting of its kind I have ever tasted. Thin sticks of sweet potatoes resembling a nest on the top, decorated the dish and it was visually magnificent. A similar set-up was created at the beef tartar with the fried potatoes and parmesan cream. Light and cool, with high quality meat and beautiful combinations.

The parmesan risotto was also a delighful dish. The rice was ideally cooked and the addition of truffle oil, fresh truffle and chives formed a “must taste” creation. A bit of basil oil at the garnish was the delicate detail that led to the road to perfection.

The chef’s “linguine all’amatriciana with pork belly and shrimp, chili pepper and a pinch of lemon, was definitely a dreamy dish that would tranform me to this chef’s lifetime taste advocate. A carbonara was the next dish I tried. I requested to see how a “summer” carbonara could be made. The question was, how the egg cream and the guanciale, which are fatty ingredients by default, could be served in a summer version. And of course I was once more surprised pleasantly. The taste of the genuine carbonara was there, less creamy, but perfectly mede for someone to enjoy it during summer time.

The restaurant opens in the morning with breakfast and has an “all day” form , with selections such as burger with smashing delicious brioche bread and fried eggs with fresh truffles and toasted bread, pizzas and sandwiches with ciabatta romana, salads and exceptional desserts.
