These simple, healthy cookies are so tasty you won’t believe it! Kids will love them, too.

Serves: 70-80 cookies Prep. time: 25′ Cooks in: 20′ Ready in: 45′

1 + 1/4 cup strong white flour
1 + 1/4 cup extra-virgin olive oil
1½ cup white granulated sugar
1 + 1/4 cup water
5 tsp baking powder
1 tsp baking soda, powder
1/4 cup cognac
1 tsp cinnamon powder
1/4 tsp clove, powder

Step 1
In the bowl of your stand mixer beat sugar with oil until fluffy. In a small bowl dissolve baking soda in the cognac and stir in the water. Add in the mix.

Step 2
In a bowl mix half flour with baking powder, cinnamon and clove. Add gradually in the bowl of your stand mixer until all ingredients combine well.

Step 3
Add remaining flour in batches kneading with your hands until you get a medium, soft dough. You might not need to use all the flour.

Step 4
Form cookies in any shape you like and put on a baking pan, lined with non-stick baking parchment. Bake in a preheated oven at 180°C/fan for 20 minute or until nicely colored.
