Try this warm potato salad with a nice orange twist! You’ll love it!
Serves: 6 Preparation time: 20′ Cooks in: 25′ Ready in: 35′
1 kg waxy small sized potatoes, washed, dry
2 oranges, peeled, diced
1 medium onion, sliced
½ cup black Kalamata olives, pitted
2/3 cup extra-virgin olive oil
1 lemon, juiced
4-5 tbsp parsley, finely chopped
Place potatoes in a large pan with cold water and salt and allow to boil until soft. Drain and allow to cool. Peel and dice in a large bowl.
Add orange, onion and olives, season with a little salt and toss carefully.
Transfer potato mixture on a serving plate. Beat oil with lemon and drizzle the salad. Sprinkle with parsley and serve warm.
