Ingredients
4 beef sirloin steaks, 1½ inches thick
4 red peppers, roasted, sliced
1 green pepper, no seeds, finely chopped
1 onion, finely chopped
1 garlic clove, crushed
5 tbsp extra-virgin olive oil
1 tbsp vinegar
fresh basil leaves
salt, freshly ground black pepper

Method

Step 1
For the sauce: In a large pan heat 2 tbsp of olive oil over medium heat. Add onion, garlic and green pepper and cook gently, for 5 minutes or until light golden. Stir in roasted red peppers. Add vinegar, season with salt and pepper and basil leaves. Add a little hot water if necessary. Pulse all ingredients in a food processor. Transfer in a bowl and set aside.

Step 2
Brush steaks with oil. Heat a grill pan over medium-high heat until hot. Cook steaks for 10 to 15 minutes, turning only once, or until cooked according to your desire. Transfer steaks to a cutting board, season with salt and pepper and let stand for 5 minutes before cutting.

Step 3
Serve warm with pepper sauce and lemon wedges. Accompany with green salad and country-style potatoes or French fries.
