Shrimp and mango together are a perfect match! Try this recipe and you’ ll see what we mean…

Serves: 8 Preparation: 20′ Cooks in: 10′ Ready in: 30′

32 medium shrimps, peeled
16 prosciutto slices, halved

For the sauce:
2 ripe mangos, peeled, in chunks
2 tbsp fresh spearmint, finely chopped
½ onion finely chopped
1 red pepper, finely chopped
2 tbsp white wine vinegar
wooden skewers, soaked in water for 20min
salt, freshly ground black pepper


Step 1
Fold each shrimp like a half-moon and cover with a piece of prosciutto

Step 2
Thread 4 shrimps onto each skewer. Cook in the BBQ, oven grill or grill pan until prosciutto is nicely colored. Serve with the mango sauce.

Step 3
Pulse mangos in a blender until smooth and then pulse with the rest of the ingredients for a couple of times until it reaches a nice consistency. Add extra salt and pepper, vinegar or spearmint if necessary, according to you taste.
