Wild mushrooms -here we use porcini- are perfect when baked in the oven! They become really juicy. Serve them warm with greens and tomato and a nice glass of white wine!

Serves: 3-4 Prep. time: 30′ Cooks in: 15′ Ready in: 45′

500 g fresh porcini mushrooms
1 sprig fresh thyme, leaves picked
100 ml extra-virgin olive oil
1 tomato, diced
1 kg wild edible greens of your choice, chopped, boiled for 5 minutes
salt, pepper

Step 1
Preheat oven at 180οC/ fan. Wet a large piece of baking parchment. Toss mushrooms with thyme and oil, seasoning with salt and pepper. Close in a packet and seal with kitchen string. Place on a wire rack and then on a shallow baking dish. Bake for 10 minutes.

Step 2
Open the packet, toss with drained greens and tomato, season with salt and pepper and serve immediately.
