Mackerel is a great source of omega 3. Simply bake it with tomatoes, onion, garlic, raisins and potatoes! A super nutritional dish!

Serves: Preparation time: 15′ Cooks in: 55′ Ready in:1:10′

4 mackerels prepared, skin on
80 ml extra-virgin olive oil
2 onions, sliced
4 garlic cloves, sliced
2-3 red hot chili peppers, finely sliced
3 tomatoes, finely chopped
200 g tomato juice
1 tbsp tomato paste dissolved in 1 cup hot water
1 tbsp sugar
½ tsp dried oregano
1 tbsp raisins
1 kg potatoes, peeled, in chunks
salt, pepper

Step 1
In a frying pan heat half oil on medium heat and cook onion, garlic and pepper for 3 min. Add tomatoes, paste, sugar, oregano, salt and pepper. Simmer on low heat for 5 min., remove pan from heat and stir in raisins.

Step 2
Preheat oven at 180oC conventional heating. In your baking dish spread potatoes and top with fish. Drizzle with tomato sauce and remaining oil and bake for 45 min. until potatoes and fish are cooked through and sauce thickens.
