Calling all pancake fans! Ditch the boxed mix and prepare your own quick and healthy recipe for fluffy pancakes with Greek yogurt! They’re gluten free and full in protein: Win and win!

Serves: 3-4 Prep. time: 10′ Cooks in: 20′ Ready in: 15′

Ingredients
240 g gluten-free all purpose flour
3 eggs
3 tbsp sugar
¼ tsp salt
250 g Greek strained yogurt
1 tsp baking soda
150 ml low fat milk
butter or vegetable oil

Method
Step 1
In a bowl mix yogurt with soda until a little fluffy. In a second bowl stir flour with your hand for 1 min. In the bowl of your stand mixer beat eggs with sugar and salt on low speed. Add milk and yogurt and beat until combined. Add flour and beat until well combined.

Step 2
In a non-stick frying pan heat a little butter or oil on medium heat and add 2 tbsp mixture. Cook until nicely colored on both sides. When ready transfer on a platter and serve with honey, fruit, yogurt, fried eggs, cream cheese or any other ingredient you prefer.

Tip
Reserve pancake mixture in the fridge for up to 2 days.
