We transform the simple mashed sweet potatoes into a great garnish for christmas roast.

Serves: 6 Preparation time: 30′ Cooks in: 25′ Ready in: 55′

2 small potatoes, peeled, diced
4 large red sweet potatoes peeled, diced
2 garlic cloves
5 tbsp single cream
2 tbsp butter
80 g kefalograviera cheese, grated
salt, freshly ground pepper

For the pomegranate pesto:
2 pomegranates, the seeds
2 spring onions, finely chopped
1 handful orange flesh, diced
½ fennel bulb, finely chopped
1 lemon, zested + juiced
50 g pistachios, coarsely chopped
3 tbsp extra-virgin olive oil
salt, freshly ground pepper


Step 1
Bring a large pot of salted water to a boil. Add all potatoes and garlic and cook for 20-25 minutes, until very tender. Drain and transfer in a bowl. Mash with a fork, mixing cream, butter, cheese, salt and pepper, according to your taste.

Step 2
For the pomegranate pesto: mix all ingredients in a bowl.

Step 3
Serve mashed potatoes in a bowl and drizzle with the pesto.
