This is a typical Mediterranean dish. No need to make a fish stock; But if you want to add great depth of flavor, use anchovies even if you don’t like them. Don’t worry, your casserole won’t taste like anchovies…

4 cod fish fillets, in chunks
5 ripe tomatoes, peeled, chopped
2 onions, chopped
100ml extra-virgin olive oil
1 kgr potatoes, peeled, in chunks
½ red pepper, chopped
½ green pepper, chopped
1 bay leaf
3 garlic cloves, peeped
salt, freshly ground black pepper
In a medium pot and in low heat boil onions, tomatoes, garlic, peppers, potatoes and fish. Add oil, season with salt and pepper and bay leaf. Add a little water, cover with lid and simmer for 35 minutes, shaking the pot every 10 minutes. Add more water if necessary. Do not use a ladle or spoon because potatoes will break.
Turn down heat and serve warm in bowls with crusty bread for a more hearty meal, seasoning with extra pepper if you wish.
